2 sets of company policy

I currently live in texas and was recently let go with a co worker for failure to obtain a C water license in one year from date of hire. We still have one more attempt to do this but were released anyway. There are several others that are not licensed but retain their jobs. One has broken company policy extensively but keeps his since he is the Chief of Police's son, who also draws full disability and works 50-60 hours a week. They also have denied unemployment pay so I can not provide for my family. I am confused at what legal rights I have?
