Firing an employee suspected of stealing

We have a small retail store, and have various students and part timers and managers working at various schedules. Our till has been coming up short, but we thought we had just been accounting for something wrong due to a new computer system. It was then brought to my attention that various employees were nervous about working with a particular co-worker as she seemed to be on too often when shortages appeared.

I checked back two months and of the 16 times the till was short this particular employee was on staff every time. There were no shortages of any consequence (none more than $5.00) on any of the other days. The shortages ranged from $10.00 one day to $175.00 another. All told it was over $1000.00.

We want to fire her on the spot and not give her her last paycheck. What are our rights here? Anything we have to be wary of?
