My question is:
When a person dies and leaves a will, how soon should the will be available to the immediate family? I have an aunt that passed away and she left a will, and had a son. Her brothers are telling my cousin that it's going to take a few weeks to read the will because a judge has to be present. Is this correct?

The law doesn't require the will to be shown to any relative, or even the next of kin.
As a niece, it wouldn't be uncommon for a niece NOT to be listed in a will.
If you are listed as an heir, once the will is brought before the probate court, you'll be notified.
