Does a non profit organization have to release company emails if demanded by a less than pleasant member? We have a person who is less than pleasant and creates a negative vibe whenever she enters the picture. She's has threatened to sue the organization before and most people are afraid of her because of her sue happy ways.

The pleasantness of the person is really beside the question. Tell her to sue if she wants, but don't be bullied by her. Generally your company communication is private and you are not required to disclose it.

No, the company does not have to release the emails because someone threatens to sue. There are no laws saying that all communications within a company must be accessible to an employee just because they demand them to be. She has no legal case here. Good Luck to you!
