epilepsy and employment

I'm writing on behalf of a friend. She has had a hard time keeping a job because her employer states that she is not learning fast enough. She has epilepsy and I understand that both the medications and disease itself can cause trouble concentrating and memory problems. If this is the case, can she legally be fired for not learning as quickly as others? Also, can she protect her next job by documenting ways that she is making an effort to overcome the disability. For example, if she takes a job doing word processing and she continues to take an advanced word processing class on her own time and/or by periodically asking her manager on feedback on ways to improve, would she be able to avoid being let go?
