I am a postdoc research fellow works in UTHealth at Houston, Texas.I come form China, and have J-1 VISA, but I worked in Canada before I've been here. Do I have to pay for personal income tax?

We don't really know enough about your individual work history to be able to answer this question. If you're talking about paying taxes in the U.S. for income based upon your J-1 visa, then the best place to ask would be your visa sponsor.
