NY has a limited one-day-off-in-seven law which applies only to certain industries. https://www.labor.ny.gov/formsdocs/wp/LS611.pdf If you fall into one of these categories, the answer is six. If you do not, then you could conceivably be required to work 365 days a year without it violating any laws.
