Business Contracts Contractor holding back pay from sub

I recently did some work for a large contractor. When it came time for me to be paid they told me I had to sign a sub contractors contract. There was no mention of this contract before or during work. Only after completion. My question is can they do this and what options do I have. Any help would be welcomed. Thank you.

You can sign or refuse to sign. You ask can they do it, yet you say they've done it.

If you want to be pad, sign it. Then don't do work for them again, if signing it bothers you. Why complicate your life? Get paid while they're willing to pay. Cut your losses.
