Willing to pay, but . . .

My sister lived for about 3 years with her son and his live-in partner. Part of the time she paid a small amount for room and board, but for the last year or so she did not. She left their home with hard feelings on both sides, and wanting to clear the slate, got a bill from them, saying she owed about $2,700 for room and board and some Christmas presents she had given to others but they had paid for. She is willing to pay the amount, but would like assurance that this will clear her total debt with them and most especially that they will not have any claim against her estate after her passing. Would a letter from them, saying that she had paid all of her debt to them be a good enough proof that she did not owe them any more money? Does she need to hire an attorney to handle this? She is very limited on funds and will be breaking an anunity to pay this debt--although she will be breaking the anunity, in order to have money to live on, in any case. I appreciate any advice we can get on this question.
