What monies can I recoup in a civil suit?

I will be filing a civil suit to recoup monies owed for massage services rendered as a contractor for a day spa in Florida. What is the daily interest rate that I can place on the debt owed? From what date can I begin calculating the interest? Can I ask for the money that was missed from taking the day off to file the claim? Am I entitled to any compensation for the inconvenience?
