My ex and I have joint custody of our daughter. He was ordered to pay monthly child support. My daughter recently moved in with her dad and I have been voluntarily paying the same monthly support that he was ordered to pay. If I choose to set up an account in her name and provide her access to the funds (she is 15) can I stop paying support and avoid being sued for court ordered support?

no, because CS is owed to the custodial parent and not the child. I would continue to pay CS to Dad and specifically mark the checks that it is child support, otherwise it can be considered a gift.
