What are all the documents defendant would request for production in a dog bite injury case?

That would be up to the particular defendant, as he or she defends their case.

In most cases a defendant might seek evidence of all medical bills for any injured parties, any police reports indicating that plaintiff harassed or annoyed the dog in question, subpoenas requiring witnesses to be in court to testify on behalf of defendant, and anything else that might assist the defendant in protecting his or her postion.
 
I think all documents are needed like medical bills for any injured parties, any police reports indicating that plaintiff harassed, medication bills and many more.
