As a minor (age 17) in the UK, what are the conditions concerning signing of contracts. Is it correct that I cannot be legally bound by any contract I sign until I'm 18?

That is a good question. In the US that is the case and they are "voidable" by you meaning you can cancel but the other party cannot. But the moment you turn 18, if you don't cancel the contracts you will be deemed to have "ratified" them. I think the law is the same in the UK as much of US law is derived from the law in England.
