My wife has been told she has inherited some mineral rights in POLK County, Texas. We have spoke to a landman in that area that made her an offer but, from what I understand is very low. We've been back n forth with this man for almost a year. Since her Great Aunt passed the mineral rights were divided between family members. The only thing I know about my wife's family is some are good people, some are outlaws, and some are well, I don't know but, they are all greedy. My question is since we do not know how the mineral rights were divided how do we know we're not being given less than what my wife is supposed to get?

Why, you hire yourselves an attorney to investigate and offer you the facts. Then you decide.
One way to look at it, even if you get $500, it's $500 you didn't have.
Anyway, hire an attorney, see what you can discover.
There's no way a bunch of Internet strangers could ever know more than you do!
