You do nothing, say nothing, admit nothing to her.
You avoid her like she has Ebola.
If you are sued, make sure you appear in court and defend yourself.
How?
You appear and simply deny that she did anything for you, or loaned you any money.
As you said, people in relationships take gifts and give them to those they are seeing.

However, never be a borrower of a lender, don't give or accept gifts to anyone but your mother, father, son. daughter, grandparents, or your wife.

Going forward get smarter, don't get so deeply entwined with anyone, unless you marry that person, and be very careful about marrying anyone until you know that person very well.

"Trying to sue" means nothing. If you mean she is threatening to sue, ignore her. If she actually sues, then you deal with it.
