Three defendants llive outside the state and so does the palintiff. She wants the insurance proceeds fromour policies for her child of unknown paternity. Does the NJ court have jurisdiction?

We would definitely need more info in this situation - not clear.
Who are the defendants & where do they live? Who is the plaintiff & where does she live? Why do you mention NJ?
Would need more details re estate vs us - was an estate probated in NJ? Whose estate?
If we are talking about life ins., who are the beneficiaries (the defendants?) Life ins. passes outside the estate & goes to the bene(s) named in the policies.
