When the police say they have a confession and/or statement given by you and you didn't give either one doesn't the statement/confession have to be signed by you at some point?

Not necessarily true, OP. In fact, many confessions are recorded (voice or video).
In some cases the conversation is then transcribed and documented on paper supported by the video or voice recording.
 
In many cases police flat out lie about what they have in order to induce the incriminating statements.
Anyway, if you did make an incriminating statement to the officer, whether recorded or signed or not, the officer's testimony about what you said can be used against you.
