I am currently employeed as a manager without a non-compete and my employer has sold the company. The new company is offering me an employment contract accompanied by a non-compete. I will not be losing any benefits, salary or status but I will also not be gaining anything new. Can the new company make me sign the contract and the non-compete? If I don't sign, can they let me go?

No, and yes. They can't MAKE you sign anything, but they have the right to release you from employment if you choose not to sign.
