Rent, Utilities Best way to pay rent so landlord cant claim to lose and evict

My landlord doesn't like me, and has been teasing me, making fun of me, wont repair damages I report, and I fear she wants to evict me but legally can't... yet. (Things have even come up missing out of my apartment, like my identity documents, Licence- birth certificate- passport- etc. I've even caught her trying to go in my apartment when she thought I wasn't there, but thats another subject to cover later.) I have this overwhelming feeling that she might start saying that she hasn't received my rent in order to file an eviction (also, I'm on Section 8 assistance). I normally pay by money order, but there is nothing stopping her from just throwing it away and claiming she never got it. If that is the case, it could take weeks to clear it up with the money order company and I wouldn't be able to pay. I tried to go to the bank I just opened an account with to get a cashiers check but they wouldnt do it. Instead they just printed some un-numbered blank checks that don't have my name or anything on them and told me to use them (I've been having issues with my bank too)... I need to know the best way to pay my rent that can be traced when cashed and quickly refunded if they come up missing. What can I do?
 
If the landlord take credit cards or debit cards, that is nearly foolproof.

The other option is foolproof, cash, with a written, signed, dated receipt.
 
Or, if you want to pay by check, hand it over personally, and have a witness with you who can make a video of you handing over the check and is willing to testify in court if necessary.

That's a really great idea. I will have someone come with me and witness me handing her a check or money order in person. Thanks!!
