Recently shipped a machine valued at $2000 and insured for that amount at UPS shipping store, Mailboxes Etc. Shipped in original packaging from manufacturer which included original styrofoam padding and we added newspaper to add additional padding AND reinforced box by taping even though box in good shape. Clerk asked for amount we wanted to insure, we told her, paid her and left. Upon arrival machines cast iron bottom had been cracked and so had the plastic top. It was dropped one or more times to do the damage it did. UPS picked it up, had insurance "adjuster" check the damage and denied claim for "improper" packaging. No signs posted about packaging requirements, no limits discussed regarding insurance requirements etc. It was meticulously packed. UPS says sorry for your luck, UPS shipping store says sorry for your luck but we'll check it out however we didn't pack it so not responsible and insurance adjuster with attitude says "I don't even have to talk to you". Now what? Any recourse and if so what is the course of action.

There is someone above the adjuster that you spoke with who you can elevate your complaint to, including the unprofessional conduct of the adjuster.
You will have to obtain and review whatever documentation you have from the shipping process that explains the liabilities involved and how the insurance works.
However, if it was shipped in the manufacturer's own packaging PLUS another box, it's got to be a tough sell when arguing it was improper packaging. That sounds like a simple copout procedure to see if you will go away.
Read up on all the UPS documentation you can find regarding the insurance and claims process and see if there is another remedy beyond what you have done so far. If you don't get anywhere then there is always small claims court... let a judge review the situation and hope for the best. It seems you should have a pretty good argument.

There is definitely an appeals process. If nothing else send their registered agent a letter threatening to sue for the $2000. You have a decent case.
