Incorporating a company for original music

I am a composer of music and am starting a company with a partner in which we provide original music and audio post production for film, television and commercials. For several reasons I wish to avoid incorporating or forming ownership of the business at this time and hope that we can work as sole proprietors under a fictitious name. The main reason for this is that the fair percentages of ownership between the two of us is hard to determine until we get a few jobs and see how our roles in the business will play out. My question: is this a legally unwise decision to operate in this business of music licensing and composition without the protection of limited liability?
