Where would I go if I wanted to watch lawyers fight speedig tickets in court? Is there a way for me to know when they will be fighting a speeding ticket specifically?

Google the city, county, and state court system that interests you.
Most information will be posted online.
Generally, traffic citations aren't described, unless the charge is serious (DUI, Reckless, etc...).
However, more serious charges are shown on the the court's calendar or docket by day and time.
It will also indicate the judge or hearing official.
A telephone number is provided for further questioning.
Finally, all court proceedings are open to the public.
A primary tenant of all US justice is that we have no secret matters or star chambers, other than grand jury proceedings.
Once a charge has issued, or an indictment "true billed", everything is open to public scrutiny.
Your local elected officials can also advise you further.
Trust me, lower level justice is a very entertaining spectacle at times.
It can also be a meat grinder, and at times it'll break your heart.
