What are the laws surrounding letting a salaried employee go after thy have given a 2 week notice? Am I entitled to be pd for the entire week?

There are a very few instances in which an exempt employee is NOT entitled to be paid for the entire week. Your first and last weeks of employment are among them.

If you give your notice and they choose to accept your resignation immediately, that is perfectly legal and they owe you only for the days you actually worked. While many employers will pay you for your notice time, they are not required to do so by law.

Depending on what state you are in, you MAY be entitled to unemployment for the two weeks notice time. It can do no harm to apply. Or you can see if your new employer would like you to start earlier.
