Shoplifting, Larceny, Robbery, Theft Shoplifting Help!

So I was very recently charged with a "Class C Misdemeanor" for shoplifting from a grocery store. Apparently the LP guy saw me on video drink a protein shake and not pay for it along with my other groceries. (I put it back on the shelf...)

Anyways I am in professional school right now (with a prior spotless record) so I need this off my record for the sanctity of my future. I consulted a lawyer who told me that making a plea bargain or dismissal with the prosecutor is unlikely and the most realistic route is a deferred adjudication followed by expunction.

Is this to be expected in a case like mine? Is it pretty safe to assume that doing this would actually result in a clean record once again? Or would it be wiser to go to trial and try and prove my innocence?
