International Issue American Wife / Canadian Husband living in US, thinking of moving to Canada

Hello everyone, this is a fantastic site and I appreciate any help I can get in regards to my situation. Thanks in advance.

My wife (Chinese, moved here when 5, citizenship at 18 [1994]) and I (Canadian, moved to US on work visa, have Green Card through her) are currently living in California. I obtained my Green card at the end of last year (2005).

We were thinking of moving to Canada for an unknown length of time (many years though) and we were wondering what will happen to my Green Card status during this time. Can it be placed on hold, or will we need to start the whole process over again should we decide to move back in the future?

Also, if anyone knows, we've been trying to find out more regarding obtaining dual citizenship for both her and I, if anyone has some links to check into that.
