I am going based on the assumption that the judge's order to jail the woman was legal at the time the order was made:

Saying that there is no criminal code that allows a judge to mandate a public apology isn't really on point here. The defendant was facing jail time. The judge could have given her jail time and been done with it, but decided to "go easy" if the defendant would simply apologize. The defendant refused, so the judge imposed the jail time. The judge did not mandate that she apologize.
 
Nice theory.

But, depending on the law, one might be wiser to address the unjust law in court rather than while face down on the ground in handcuffs.

What happens when the court isn't an option.
It was legal in Nazi Germany for the state to kill jews. It was the law that soldiers follow orders.

When court is not an option and a law is so egregiously unjust (genocide for example) it's time for armed citizenry to take down the government that issues those orders or make the idea so potentially costly that the government thinks twice about it.

Jews, and others, were at a disadvantage, because Hitler disarmed the citizenry early on. Sure, the Holocaust would still have happened due to superior firepower but I like to think that it would have been significantly more costly in German manpower if every Jew had a firearm at least the equivalent to that of the average German soldier.

If the US government passed a law ordering the American military to enter homes and confiscate firearms, using deadly force if necessary, how many American soldiers do you think would obey that "lawful" order?

We've already had armed police do it with the the outcome we knew would happen and with the exception of some right-wing Facebook posts not much came from it.

I have little doubt that the US military could put together squads that would follow the orders.

I agree and would add the following martyrs that probably wouldn't want to hear that nonsense, either:

Malcolm X
Any of the millions of now deceased SLAVES
The millions of Native Americans whose land and gold somehow got stolen
Our founders
The soldiers of the Confederacy and the USA
The six million Jews who were slaughtered at Hitler's behest
The Uyghurs or Uighurs being slaughtered by the Commie Red Chinese Regime
The homosexuals who were slaughtered for centuries
The millions of US females who were NOT allowed to vote until 1919
Or anyone who has suffered, been abused, or KILLED by "gubmint impotent peepulls"

I suppose one could say the students at Kent State University (50 years ago) experienced such immoral, illegal conduct by members the Ohio National Guard, too.
 
And since she violated a court order she was properly held in contempt of court. I am not sympathetic.

I don't think the Texas Supreme Court agrees.

What do think the odds are for the City or the County replying to the order?

And if she is not a martyr by definition she is certainly a symbol of defiance in this crazy time. They were raising so much money so fast on Go Fund Me that the organizer had to shut down the donations.

I may have misapplied the moniker, martyr, when it would have been more appropriate to say her business was martyred (as in DESTROYED) in an effort to destroy the economy to assist in the eventual overthrow of a sitting president.

Another citizen was discovered "maskless", someone "dimed" her out, the "mask" police were dispatched to "enforce" Alabama's "mask mandate", and the "bandido femenino sin máscara" ended up being "body slammed" and eventually taken into custody.

The Birmingham Police Department said it is investigating the use of force by the officer, who was off-duty and working a side gig as a security guard for the store.

The woman has not been identified but faces charges for disorderly conduct, resisting arrest, third-degree criminal trespassing, possession of marijuana, and unlawful possession of a controlled substance.

In addition to the female bandit not wearing a facemask, the interaction was also spurred by the woman's alleged "disorderly conduct."

A Walmart employee had asked the woman to wear a face covering, but she allegedly grew angry and attracted the attention of the officer.

The woman began "yelling out obscenities toward customers and employees," Mauldin said. The officer began to detain her after she was asked to leave the store and refused.

"The officer used a takedown measure to gain control due to the other threat factors in the store," he said.

"Takedown measure" is fancy talk for "excessive force".
I am confident this action will be out of synch with Walmart policy, and the store's many cameras will show this officer losing his cool.
He may lose both jobs if the investigation goes against him. He has training to deal with things like this without throwing people to the ground.
